Darren’s culinary journey started under the tutelage of Albert Roux, which has laid a solid foundation for his exceptional skills in the kitchen. Offering a unique approach to cuisine focusing on sustainability, simplicity and quality.  Dishes are meticulously crafted to balance and complement each element, creating a symphony of tastes that delight the palate.

Career trajectory includes working in one of the world's top restaurants in Copenhagen, Relæ. Mingary Castle’s sous chef, head chef and then castle manager, where he honed his craft and embraced the highest standards of culinary excellence, before taking over as head of food and beverage at Inverlonan. Recently completing a stage at Pearl Morissette, a restaurant celebrated on La Liste as a hidden gem. For 3 months he was the resident chef at Croft3, a new space on the Isle of Mull focusing on the best ingredients the island had to offer in a relaxed 3 course setting. This diverse and illustrious experience has equipped Darren with a unique perspective on fine dining, and the ability to offer a dining experience that is both refined and innovative.

Darren’s minimalistic approach not only pleases the palate but also invites diners to engage with the food on a deeper level, appreciating the subtleties and nuances that might otherwise go unnoticed. The goal is to create an environment where guests can savour each bite, free from distractions, and leave with both their taste buds delighted and their minds challenged.
